Vinegar and Oil
Growing up, the dressing was vinegar and oil.
I don’t remember anything else.
Today I made what we always called a Greek salad. Tomatoes cut into wedges. Cucumber. Red onion. Green pepper. I drizzled red wine vinegar and olive oil over the vegetables, added a few Kalamata olives, and set a slab of feta on top. A pinch of dried oregano. Freshly cracked black pepper.
It was simple. It was very good.
And it tasted exactly right.
How I Make It
- Tomatoes, cut into wedges
- English cucumber
- Red onion
- Green pepper
- Red wine vinegar
- Olive oil
- Kalamata olives
- A slab of feta
- Dried oregano
- Freshly cracked black pepper
Chop the vegetables. Drizzle with vinegar and oil. Add the olives and feta. Finish with oregano and pepper.
